Thanksgiving at my house!

Since where we moved this past year is centrally located to all of my side of the family it was decided that we would have Thanksgiving dinner at our house.

The nice thing is everyone volunteered to bring certain dishes but they pretty much covered everything and I don't know what to make!

Here is what people already said they were bringing:

Turkey/gravy
Squash
Stuffing
Bread
Deviled Eggs
Coleslaw
Pistachio salad
Cranberry Sorbet
Pumpkin pie


Besides mashed potatoes I don't know what else is missing!

I think I am going to make Marilyn's recipe that she left on my blog giveaway (thanks Marilyn!):

Crock Pot Pumpkin Spiced Latte

Ingredients
2 cups milk (I use 2%)
2 tablespoons canned pumpkin
2 tablespoons sugar
2 tablespoons vanilla
1/2 teaspoon pumpkin pie spice (or 1/4 tsp cinnamon, 1/8 tsp nutmeg, 1/8 tsp ground cloves, and tiny pinch of ground ginger)
3/4 cup strong brewed coffee (or 1/2 cup brewed espresso)
garnish with whipped topping

Add the coffee/espresso and milk to the crockpot. Whisk in the pumpkin, spices, sugar, and vanilla.
Cover and cook on high for 2 hours if everything is cold. Whisk again.
Ladle into mugs, and garnish with whipped cream and additional cinnamon.



But I am not sure what else I am going to make! I feel like I have to make at least a couple of dishes- it IS at my house!

Stir-Fried Green Beans




I made my first recipe out of my More-with-Less Cookbook! For those of you who haven't heard of it, it is a great resource for healthy, cost-effective recipes.

It is a very interesting book- with a copyright of 1977 some things are a little dated (like the costs of food in the beginning), but a huge majority of the recipes in the book use a lot of common ingredients that I already have on hand. I love this because there is no running out to the store to have to get that one ingredient that you don't have!

Tonight for dinner, since I had a pound of fresh green beans that I bought at the Farmer's Market, I made:

Stir-Fried Green Beans
&
Peanut Soup


The Stir-Fried Green Beans were a hit with my family - I added leftover rotisserie chicken, served over brown rice, and it was delicious! The peanut soup was not as good. I have always wanted to try it and it was easy to make but just not our thing. My youngest loved it but he was the only one. Since there is a lot left over he will be eating peanut soup for the next couple of days with his lunch!
